that's a lot of carrots...





the red bowl was filled to the rim before i added the proper amount of carrots to the mixer. isn't that a TON of carrots!

i'm making a carrot cake for my neighbor Mike. he fixed our old computer this past weekend so the kids can have a computer for homeschooling - word processor, games, and internet access. PERFECT!!! what a blessing that will be for us! always nice to have a computer friend who can do wonders with your old computer!

so, Mike's favorite dessert is carrot cake. i've never made one but i've had Katy's and her recipe is AWESOME. if i don't have a good recipe, i always know Katy will. :)

i made my list this morning. while at the store i picked up the 3lbs of carrots i believed the cake called for. i even thought "that sure is a lot of carrots." but what do i know? i'm no carrot cake expert. :)

got home. peeled the carrots. shredded them in the food processor. at least i didn't have to do that by hand, that would have been a job! i kept thinking, why would anyone make a shredded carrot anything without a food processor!!! :) when i saw the bowl of carrots i REALLY thought that was a LOT of carrots for one cake.

i was right. the recipe called for 3 CUPS not 3lbs! HELLO! good thing i caught that before i tossed them all in. i actually think it would have been near impossible to mix that many carrots with anything! ha!

so...i plan to make a carrot salad today. i could probably do that and still make another carrot cake. maybe i'll make carrot cake cupcakes and freeze them. i don't know. maybe i should google recipes that call for shredded carrots. i have plenty to go around! :)

that's hilarious!!!! go to recipezaar.com and filter by ingredients - that's a cool site I use when I have 'stuff' hanging around that I need to use! yummm, how I love carrot cake.... are you doing cream cheese frosting too?

cracks me up still - i'm just glad i didn't write the recipe wrong for you. my brain is a bit frazzled lately after all. i wish i was coming tonight for dessert!

Katy's recipe for Carrot Cake is the BEST ever! Keith's favorite dessert is also carrot cake, and he loved the one I made from her recipe!...so did the rest of my family (and none of them really like carrot cake!:) Very, very good...glad you got your computer fixed, and that you didn't throw all those carrots into the batter! I'm curious how that might have turned out! :)

So funny! Makes me think of the LONG list of creative uses for shrimp that "Bubba" lists in the movie Forrest Gump...cause I'm guessing you'll find lots of creative uses for the carrots! Carrot Cake, Carrot Muffins, Carrot Salad, Carrot Gumbo...maybe not the last one... ;o)

This is so funny.... Aren't you glad you didn't manage to bake it with all those carrots and deliver it to a neighbor to eat! Can you imagine how sorry that neighbor would feel for your family! Ha! If it sounds bazaar in regards to a recipe it usually is! This is something you will laugh about for years to come.

Send some carrots our way! Carolina Grace eats those like they're going out of style and Ian's favorite cake is CARROT cake. What a great story!

I mean hey we've all been there...just made muffins last week, stuck them in the oven and looked on my counter and realized I had not put the eggs in...I grabbed the muffin pan out of the oven dished it back into a bowl and added the eggs and girl the muffins turned out great. Yikes! It must be MOMMY BRAIN!
